LEMON BLUEBERRY PANCAKE RECIPE

SWEETHEART PANCAKES

To celebrate Pancake Day, I'm sharing the recipe for my Sweetheart Lemon Blueberry Pancakes. 


These aren't just great for Love Month but great for any day where you wanna show yourself or loved ones a little extra love at breakfast! 


Full details on the recipe and items I used in the kitchen are below!

RECIPE

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • ½  teaspoon salt, to taste
  • 1 tablespoon white sugar
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1 1/4 cups buttermilk
  • 1 lemon 
  • ½ cup blueberries


Mix together all the dry ingredients first, then add the lemon zest. Then add the juice of the lemon you zested along with all the wet ingredients. If your batter is too thick, you can add more milk of any kind. Gently stir in the blueberries last. 


Preheat your pan over medium heat. Be careful not to turn your heat up too high so that your pancakes don't burn! Spray your pan and ring with cooking spray and then add your batter. 


Cook for about 2-3 minutes until you begin seeing holes on the top side of the pancakes and can lift the ring from the pancakes and then flip them. Cook for another 2-3 minutes until golden on the opposite side. Then transfer your pancakes to a serving plate, add top with extra blueberries and enjoy! 


**You can easily make this a waffle recipe by taking up the oil to 6 tablespoons.
